Excel using Processor but not RAM

When we run Excel 2010 x64 (large calculation) it consumes all of the processor 100% but less than 1% of the ram. How can I force (or firmly request) excel to utilize all of the RAM (24GB) that the machine has available. 

If I add another processor - what settings can I manipulate to let excel utilize multi-core processing?

Windows 7 PRO 64bit,
