If you create activities in the Outlook client, then they wil immediately appear in Outlook as well as CRM. (assumining it's a Task or Appointment). If the activity is created in the Web client or through workflow, it won't sync to Outlook until you go offline. The same applies for contacts and the Outlook contact folder.
